According to the National Confederation of French Bakery and Pastry (CNBPF), the galette des rois period represents up to 10% of the turnover of artisan bakers. This year, with inflation which stood at 3.7% over one year in December 2023, the price of pancakes is changing. According to France Info, the price of pancakes between 2022 and 2023 had already seen increases of between 1.20 and 3 euros on average.
