The cook has indeed worked at Noma, an establishment in Copenhagen, Denmark, named the best restaurant in the world on several occasions by the 50 Best and three stars by the Michelin Guide.
Alfredo Vozmediano Romero revealed the secret of this recipe on his Instagram account. To make it, all you have to do is grab a single ingredient, a bottle of whole milk.
Once this essential ingredient is in your hands, grab a non-stick pan and pour the amount of milk required corresponding to the size of the container. Pour it into the cold pan and bring it to a boil.
When the milk “starts to evaporate and create a film on the surface, put the fire on a very low temperature and let it caramelize slowly. It should reduce slowly for about 10 minutes”, he specifies on his account. Instagram.
The chef also explains that by sprinkling the pancake with water during cooking, it will be “much more flexible and will have a more moist texture”. Once the crepe is ready, all you have to do is take it off the pan without even cooking it on the other side.
Now all that remains is to taste this dessert which, according to the chef, has “a flavor between caramel and milk jam”.
